Ingredients
  

  • 2 cups blanched almond flour
  • 1 tablespoon baking powder (aluminum-free)
  • 1/2 teaspoon fine sea salt
  • 1/2 teaspoon garlic powder (optional but recommended)
  • 1/4 teaspoon onion powder (optional)
  • 4 large eggs, room temperature
  • 1/2 cup sour cream (or full-fat plain Greek yogurt)
  • 4 tablespoons unsalted butter, melted and slightly cooled
  • 1 1/2 cups shredded sharp cheddar cheese
  • 1/4 cup finely grated Parmesan cheese
  • 2 tablespoons chopped chives or green onions (optional)
  • Freshly ground black pepper, to taste

Method
 

  1. Preheat and prep: Heat your oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Mix dry ingredients: In a large bowl, whisk together almond flour, baking powder, salt, garlic powder, and onion powder until well combined and lump-free.
  3. Whisk wet ingredients: In a separate bowl, whisk the eggs, sour cream, and melted butter until smooth. Let the butter cool slightly so it doesn’t scramble the eggs.
  4. Combine and fold: Pour the wet mixture into the dry ingredients. Stir until just combined. Fold in the cheddar, Parmesan, and chives. The dough will be thick and sticky.
  5. Portion the dough: Use a large cookie scoop or spoon to drop 10–12 mounds of dough onto the lined baking sheet, spacing them about 2 inches apart. For a neater shape, gently pat the tops to round them.
  6. Season: Sprinkle a little black pepper on each biscuit. You can add a light pinch of extra Parmesan on top for a golden crust.
  7. Bake: Bake for 15–18 minutes, or until the tops are golden and the biscuits feel set when lightly pressed. Rotate the pan halfway for even browning if your oven has hot spots.
  8. Cool briefly: Let the biscuits cool on the pan for 5 minutes, then transfer to a wire rack. They’ll firm up as they cool but stay tender inside.
  9. Serve: Enjoy warm with butter, alongside eggs, or slice and fill with sausage, bacon, or avocado for a quick breakfast sandwich.
