High Protein Birthday Cake Pudding - Creamy, Fun, and Satisfying

Ingredients
  

  • 1 cup low-fat cottage cheese (or 2% for extra creaminess)
  • 1 cup plain Greek yogurt (2% or 0%, your choice)
  • 1 scoop vanilla whey or casein protein powder (about 25–30 g)
  • 3–4 tablespoons milk (dairy or unsweetened almond milk), as needed for blending
  • 2–3 tablespoons granulated sweetener (sugar, allulose, or maple syrup; adjust to taste)
  • 1 teaspoon pure vanilla extract
  • 1/8 teaspoon almond extract (optional but key to “birthday cake” flavor)
  • 1/8 teaspoon butter extract (optional, for richer cake notes)
  • Pinch of fine sea salt (enhances flavor)
  • 2 tablespoons rainbow sprinkles (plus extra for topping)
  • Optional add-ins: 1 tablespoon vanilla pudding mix (sugar-free or regular) for extra thickness; 1 tablespoon cream cheese for tangy richness

Method
 

  1. Blend the base: Add cottage cheese, Greek yogurt, protein powder, milk, sweetener, vanilla, almond extract, butter extract (if using), and a pinch of salt to a high-speed blender. Blend until completely smooth and glossy, 30–60 seconds.
  2. Check sweetness and thickness: Taste and adjust sweetener. If it’s too thick to blend smoothly, add a splash more milk. For extra body, blend in 1 tablespoon of dry vanilla pudding mix or a spoonful of cream cheese.
  3. Fold in sprinkles: Pour the pudding into a bowl and gently fold in sprinkles with a spatula. Don’t overmix or the colors may bleed.
  4. Chill: Cover and refrigerate for at least 30–60 minutes. Chilling lets the flavors settle and the texture thicken.
  5. Serve: Spoon into cups, top with extra sprinkles, and enjoy. For a party vibe, add light whipped cream and a candle.
