Mix the base: In a medium bowl, stir together peanut butter, vanilla extract, and your sweetener. If using a granulated sweetener, whisk well so it dissolves evenly.
Add dry ingredients: Sprinkle in protein powder and almond flour.
Start with 1/2 cup protein powder; you can add more later. Mix until a thick dough forms.
Adjust texture: Add almond milk 1 tablespoon at a time. You’re aiming for a soft, cookie-dough consistency that holds together without crumbling.
Fold in chips: Stir in the mini chocolate chips.
If the dough feels too soft after mixing, pop it in the fridge for 10–15 minutes to firm up.
Shape the bites: Scoop about 1 tablespoon of dough and roll into balls. You should get 16–20 bites, depending on size.
Chill to set: Place on a parchment-lined plate or container. Chill for at least 20 minutes to help them hold their shape.
Enjoy or store: Eat straight from the fridge or let them sit at room temp for a minute for a softer bite.
