Ingredients
  

  • Cooked chicken (about 4 cups, shredded or diced; rotisserie chicken works great)
  • No-sugar-added BBQ sauce (about 1 cup; check labels for hidden carbs)
  • Cream cheese (8 oz, softened)
  • Heavy cream (1/2 cup)
  • Shredded cheese (2 cups; cheddar, Monterey Jack, or a blend)
  • Cooked bacon (4–6 slices, crumbled)
  • Green onions (2–3, sliced)
  • Garlic powder (1 tsp)
  • Onion powder (1 tsp)
  • Smoked paprika (1 tsp; optional but recommended)
  • Salt and black pepper (to taste)
  • Olive oil or butter (for greasing the baking dish)

Method
 

  1. Preheat and prep: Heat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish with olive oil or butter.
  2. Soften the base: In a large bowl, beat the softened cream cheese until smooth. Whisk in the heavy cream until creamy and lump-free.
  3. Add the flavor: Stir in the no-sugar BBQ sauce, garlic powder, onion powder, smoked paprika, and a pinch each of salt and pepper. Taste and adjust seasoning.
  4. Fold in the chicken: Add the shredded chicken and half of the shredded cheese. Mix until everything is well coated.
  5. Assemble: Spread the mixture evenly in the prepared baking dish. Top with the remaining cheese and crumbled bacon.
  6. Bake: Bake for 18–22 minutes, until the casserole is hot and the cheese is melted and bubbling around the edges.
  7. Finish and serve: Let it rest for 5 minutes. Sprinkle with sliced green onions. Serve with a side salad, roasted broccoli, or cauliflower rice.
