Preheat and prep: Heat your oven to 350°F (175°C). Grease a 9-inch pie dish or a 9x9-inch baking dish with butter or spray.
Cook the add-ins: In a skillet over medium heat, cook bacon until crisp, then crumble.
If using sausage, cook and break into small pieces. Sauté mushrooms and onions in butter with a pinch of salt until softened and lightly browned. Add spinach and cook just until wilted.
Let everything cool slightly.
Whisk the egg mixture: In a large bowl, whisk eggs, heavy cream, garlic powder, thyme, salt, pepper, and red pepper flakes if using, until smooth and well combined.
Layer the dish: Spread the cooked meats and veggies evenly over the bottom of the greased dish. Sprinkle most of the cheese over the top, reserving a small handful.
Pour and top: Pour the egg mixture evenly over the fillings. Jiggle the dish gently to settle.
Sprinkle the remaining cheese on top.
Bake: Place on the center rack and bake for 28–35 minutes, or until the edges are set and the center has a slight jiggle. A knife inserted near the center should come out mostly clean.
Rest and slice: Let it rest for 10 minutes before slicing. Garnish with chopped chives or parsley if you like.
Serve: Enjoy warm as-is or with a simple side like sliced avocado or a small green salad.
