Add liquids first. Pour the coconut milk and water into your blender. This helps the blades catch the ingredients and makes blending smoother.
Add the greens. Place the spinach on top of the liquids.
If your blender struggles, blend the liquids and spinach for 10–15 seconds before adding fruit.
Add fruit and extras. Add the pineapple chunks, banana, lime juice, chia or flax if using, and a small pinch of salt.
Blend until smooth. Start on low, then increase to high for 30–60 seconds, or until everything looks silky and bright green.
Adjust texture. Too thick? Add a splash of water. Too thin?
Add a few ice cubes or more frozen pineapple and blend again.
Taste and tweak. If you want it sweeter, add a drizzle of honey or a couple of dates. For more zing, add a bit more lime.
Serve right away. Pour into a chilled glass and enjoy while it’s cold and vibrant.
